All the Best on Thanksgiving and Quick Appetizer Recipe

Everyone is so busy on Thanksgiving day (and probably the day before too, but anyway), so I want to wish you and yours a very happy Thanksgiving now.

Thanksgiving is a wonderful holiday IMHO: no gifts and lots of food! This year, I am going to my cousin’s house about 30 miles away. I was told not to bring anything besides wine, but I feel weird about that so I’m going to make an appetizer to bring along, cheddar cheese sticks. They’re super easy and fun to make, and people usually like them. Plus they have only 6 ingredients so you can’t beat that!

Ingredients

  • 1 stick butter or 1/2 c. butter softened
  • 2 cups shredded cheddar cheese
  • 1 1/2 c. all purpose flour
  • 1/2 tsp. salt
  • 1/4 tsp. cayenne pepper
  • about 1 T. milk or half & half
  1. In a large bowl, beat butter until light and fluffy. Beat in the shredded cheese until blended. I do this in my KitchenAid mixer, but you can do it by hand if you prefer.
  2. Combine flour, salt and cayenne. Stir the dry mixture into the butter/cheese mixture till a dough forms.
  3. Add in a little milk or half and half to make for easier rolling out of the dough
  4. Roll into a rectangle about 15″ x 6″. Use a pizza cutter to cut them into 6″ strips about 3/8″ inch wide. (I have tried making longer ones, but they often will break.) Place them on uncreased baking sheets with at least 1/2″ between them.
  5. Bake in a preheated 350 degree oven till lightly browned, about 15-20 minutes. I try to remember to rotate the pan half way through. Cool 5 minutes or so before removing them to a wire rack to cool. Store in an airtight container.

I’m going to make mine tonight and store them in a container with one of those little things that must be filled with calcium carbonate or something to keep pills or crackers dry or crispy.

So if you need another appetizer, this is one to try since you may have the ingredients on hand already, and it doesn’t take long to make.
