Easy Satisfying Weeknight Dinner with Barber Foods Chicken

As I’ve said before, I am mostly a scratch cook. I enjoy cooking most of the time. But one night a week, usually Monday or another night if I have a meeting, I give myself a break from making a completely from scratch meal, and I treat myself to a delicious and easy Barber Foods stuffed chicken breast instead.

I discovered Barber Foods stuffed chicken breast probably 15 years ago. I went to a wedding, and the entree was a delicious Chicken Cordon Bleu, a rolled breaded chicken breast filled with ham and a cheesy sauce. Afterwards, I saw Barber Foods Chicken Cordon Bleu in the freezer case of my local supermarket.

I tried it, and loved it. Since then, I alternate between Chicken Cordon Bleu and Chicken stuffed with Broccoli and Cheese. And I’m serious about my once a week obsession because I buy the big size with 6 chicken breasts!

Recently, I had a chance to help spread the word about Barber Foods stuffed chicken breasts via the social media and blogging group, BzzzAgent. Barber Foods is a brand that I honestly believe in and have purchased for more than a decade, so I’m happy to introduce it to you. Barber Foods treated me to the regular size package (2 breasts). I decided this would be a great opportunity to try a new flavor since they have several options. I chose Chicken with Creme Brie and Apple.

Barber Foods chicken is a cinch to make. Just open the individually wrapped chicken breast and pop it into a 375 degree oven for 35 minutes.

I usually put the frozen chicken breast on a piece of aluminum foil for easy clean up.

What’s great about this easy meal is that I can do other things while the chicken is in the oven. For instance, the night I made the Chicken with Creme Brie and Apple, I had a meeting to go to. While the chicken and the baked potato were baking in the oven, I was able to maximize my time by taking a shower, changing my clothes and freshening up my makeup.

I actually like the fact that Barber stuffed chicken breasts cook in the oven. Not only do they taste waaaaaaaaaay better than a frozen entree and almost like homemade, they give me time to do something else during that half hour of baking.

When I came back downstairs to the kitchen after about 25 minutes, I used the final 10 minutes to roast some kale in the oven (I know, I’m one of those weirdos that adores kale), and sauté some baby bella mushrooms with olive oil, butter and Vermouth on top of the stove.

I’d say it was a pretty luxurious dinner for a night when I was on the run! That night I paired the meal with lemonade because I was going to be driving, but truth be told, I often pour myself a glass of wine to accompany my usual choice of Chicken Cordon Bleu or Broccoli and Chesse!

So how did I like my new choice? The Chicken with Creme Brie and Apple is a more sophisticated flavor than the Broccoli and Cheese or even the Chicken Cordon Bleu IMHO. The combination of brie, apple, cranberry and other cheese stuffing has an intriguing edginess that I think would appeal to adults more than to children. I enjoyed it as a change of pace from my usual choices.

    1. Yes, I like the fact that I can just provide the fresh veggies but not have to spend the time cooking the protein from scratch. I was surprised when I found that my cousin’s girlfriend who is a dietician makes them too. Sometimes we just need a bit of extra me-time

    1. Jeff calls me a food snob too, Shireen, and he is definitely a food snob! But there are some nights when I have had a lot of work all day or when I am going out at night where it’s just too much trouble to prep and cook and entire meal. I discovered that I like these frozen stuffed chicken breasts much more than I like frozen entrees. I make some easy to prepare fresh veggies on the side, and it still feels like I’m eating a real dinner. I was surprised when I learned that my cousin’s significant other who is a dietician makes Barber Foods chicken once a week in their household too.

  3. I’m not a cook from scratch person anymore but I like having something for the nights I’m really low on what I can do. We don’t have Barber here but I love the varieties that they make. I’d try the seafood one for sure.

  4. The hubby and I never get a chance to eat together anymore, different work shifts. These look pretty tasty since I am always cooking for one now, oh and I’ve become super lazy in the process.

    1. I think they sell Barber Foods in Canada, Jill. They take 35 minutes to bake in the oven so they’re not a last minute thing, but they are great for when you’re on your own or for your husband when he’s eating on his own coz they’re so easy to pop in the oven, and they’re tasty. With a salad or a baked potato or whatever, it’s a real meal. 🙂

    1. I like to have Barber Foods stuffed chicken breasts on hand for nights when I’m eating on my own and don’t have time or the inclination to cook an entire meal from scratch. These are definitely tasty, and more like a real meal if I had sides than eating a Lean Cuisine or other frozen entree.

    1. Don’t you just love the deep, earthy taste of kale? How do you prepare it? I’m big on roasting it after tossing with olive oil, sea salt, pepper, thyme and rosemary. Yum!

  8. Combining broccoli with cheese would soften the broccoli’s strong taste a little, but brie and apple sounds lovely! I love kale – I’ve got a bunch of kale seeds for my Dad as a Christmas stocking stuffer LOL.
