If You’re Stuck in the House, Make Super Easy Flatbread!

Lately, I’ve been taken by the English chef, Jamie Oliver. Actually for years, I’ve found his easy style of cooking to be fantastic. My go-to Jamie Oliver/Mark Bittman chicken breast with prosciutto, parmesan and lemon zest is as easy as pie to make, and so delicious (I’ll share that another time).

So I’ve been watching the series on Create TV, Jamie Oliver’s 5 Ingredients: Quick & Easy Food from the cookbook of the same name. He shows you how to make fantastic looking dishes with 5 ingredients or less. In one of his interstitial programs (filler between shows), he shows you how to put together a super quick and easy flatbread. He makes it with self-rising flour – flour with baking powder and a pinch of salt already added. When Jeff and I were at King Arthur Flour in Vermont a couple of weeks ago, I bought a bag of KAF Self-Rising Flour.You can also buy Great Value Self-Rising Flour (with a somewhat different ingredient list than KAF but more affordable) on Walmart.com.

If you want to make your own self-rising flour from ingredients you probably already have at home, it’s a cinch. Here you go:

  • 1 c. (120 g) all purpose flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt

Mix well with a whisk. Pre-made self-rising flour makes a slightly more tender crumb than that made with the AP flour mixture, but for most recipes it will be fine.

Making the flatbread is also easy-peasy. Here’s the recipe for two pieces of flatbread. You can certainly double or trip the recipe if you want to make more.

Flatbread Ingredients

  • 100 g self-rising flour and a little more for dusting the countertop
  • 6 T. plain full-fat Greek yogurt (I think you could also use regular plain yogurt)
  • a pinch of salt
  • 1 T. olive oil and more for the pan

Instructions

  • Weigh out 100 g of self-rising flour, or measure out about 5/6 cup (so between 3/4 and 1 cup and add to mixing bowl.
  • Add 6 tablespoons of plain Greek yogurt or plain regular yogurt.
  • Add a pinch of salt for flavor.
  • Add one tablespoon of olive oil.
  • Mix the ingredients with a wooden spoon. It will first form pea shaped balls. From there, you can form it into a ball with your hands.

  • Divide the ball in half and reform into two balls.

  • On a floured surface, roll out each half into a semi-rectangular shape of about a half centimeter or 3/8 inch. (My rolling skills aren’t the best. The edges especially.)

  • Heat a pan (I used a 10″ cast iron) with some olive oil. Add one flatbread to the heated pan at a time. Cook for about 3 minutes, flipping halfway through. For me, the second flatbread cooked faster than the first.

  • Cook till it shows browning. I put mine on paper towels after I took them out of the pan.

Eat and enjoy! I am planning to make them again this weekend to eat along with chicken marinated in Middle Eastern spices and a quick yogurt sauce.

When I’m stuck in the house, I like to cook. I will end up gaining a ton of weight, so I am making sure I head outdoors everyday to walk, jog or start doing a spring cleanup in the garden.

    I have to say these look so good and also easy to make. I also like Jamie. Did you watch him way back when he was starting out as the Naked Chef? I have been watching video’s on facebook and he is teaching his kids to cook.

    1. Gloria, thank you for reminding me that the name of Jamie Oliver’s first show was the Naked Chef. I definitely watched it! I really like this new series because the recipes are so easy. And I love seeing his adorable kids too. The flatbreads are so incredibly easy to make, though I have to work on figuring out how to roll them out to a more even shape. I try rolling, then turning the dough a quarter turn etc., but it never comes out like the pros! I’ll keep trying. Jeff tried one of the flatbreads I made the other night, and he suggested a little more salt, but he liked it nevertheless. Tomorrow night, I asked a friend to join us for dinner and I’m going to make them again, this time with the chicken with Middle Eastern spices and yogurt sauce. I hope it comes out. I’m winging it on the chicken and the sauce 😉 Take care of yourself, and stay healthy!
